Shakshouka

Recipe

The recipe makes 4-5 servings

For the shakshouka you will need

  1. 10 eggs

  2. 1 ciabatta

  3. 1 bell pepper

  4. 2 onions

  5. Optional: 1 leek

  6. 4-8 garlic cloves

  7. 2 x 400 g canned chopped tomatoes

  8. 1 feta cheese

  9. Coriander leaves

  10. Olive oil

  11. Cumin

  12. Smoked paprika

    Note: regular paprika works too.

  13. Curry blend

    Note: plain curry or "Ras el hanout" spices work too.

  14. Chili flakes

  15. Sugar

  16. Salt

  17. Black pepper

Preparation

For preparing shakshouka, I highly recommend using a Ø26 cm cast iron pan. The pan adds extra flavor.

  1. Cut the onions, bell pepper and garlic into larger pieces.

  2. Heat up the pan.

  3. Pour olive oil into the heated pan.

    Note: don't skimp on the oil, since it evaporates and burns quickly over the fire.

  4. Add the cut onions and bell pepper.

  5. Fry the onions and bell pepper until slightly golden.

  6. Add the garlic and chopped leek.

  7. Fry everything.

  8. Add the canned chopped tomatoes and stir.

  9. Add cumin, salt, black pepper, chili flakes, curry or "Ras el hanout" to taste.

  10. If the tomatoes are a bit sour, add sugar to reduce the acidity.

  11. Stir everything and cook until the tomatoes thicken.

  12. Add the eggs. Before adding each egg, make a well with a spoon and drop the egg into it.

  13. Sprinkle the eggs with extra salt and black pepper.

  14. Cover the pan with a lid and cook for 10-15 min depending on the heat and the desired runniness of the eggs.

  15. Once done, remove from the fire.

  16. Add the feta.
