Rice noodle soup

Recipe

Recipe makes 4 portions.

For the rice noodle soup

  1. 4 bunches of spring onions

  2. 2 shallots

  3. 1.5-2 chili peppers

  4. 8 sprigs of coriander

  5. 4 tomatoes

  6. 400g rice noodles

  7. ~400g pork loin

  8. ~100g shrimp

    Alternative: 0.5l chicken broth

  9. 2-3 tablespoons of oil (e.g. sunflower)

    Alternative: pork lard

  10. 1 tablespoon of soy sauce

  11. 1 tablespoon KNORR Hat Nem Thit Than

For serving per bowl

  1. 1 sprig of coriander

  2. A handful of spring onion greens

  3. A splash of lime juice

  4. 0.25-0.5 chili pepper

  5. 0.5-1 tablespoon fish sauce

    Note: amount depends on personal taste

Preparation

The entire rice noodle soup (Vietnamese Canh bánh đa) is made in a pot — no frying pan needed.

  1. Soak the rice noodles in room temperature water. Keep soaked for 1 hour.

  2. Chop the spring onions, chili pepper, shallot, and coriander

  3. Slice the pork loin and half a tomato

  4. Pour oil into the pot and heat it up

    Alternative: use pork lard instead of oil for a stronger flavour

  5. Add the shallot and spring onions to the pot. Stir-fry for ~10 seconds

  6. Add the tomato. Stir-fry for ~10 seconds

  7. Add the shrimp. Stir-fry for ~15 seconds

  8. Add the pork loin. Stir-fry for ~20 seconds

  9. Add just enough water to barely cover everything. Stir briefly

  10. Once the water boils, add the chili peppers. Simmer for ~30 sec, stirring

  11. Pour ~1.5 litres of water into the pot

  12. Cover and simmer for ~2 min

  13. Add the noodles, stir gently, and cook for ~5 min

  14. Before serving into bowls, add 1 tablespoon of KNORR Hat Nem Thit Than to the pot and stir

Serving

  1. Ladle noodles and soup into a bowl

  2. Add 0.5-1 tablespoon of fish sauce

  3. Stir

  4. Add chopped coriander, a handful of spring onion greens, a splash of lime juice, and chopped chili pepper
